INGREDIENTS:
Avocado 1
Buttermilk ¾ cups
Low Sodium Chicken Broth ½ cup
Scallions ¼ cup
Garlic Clove 1/2
Water ½ cup
Lime Juice 1 tablespoon
Salt ½ teaspoon
Cayenne Pepper .13 teaspoon
Radish ¼ cup
DIRECTIONS:
- Make the soup: Combine the avocado , ½ cup buttermilk, chicken broth, 2 tbsp. scallions and garlic in a blender and process until very smooth.
- Transfer the soup to a large bowl and while stirring, add the rest of the buttermilk, water, lime juice, salt and cayenne.
- Divide among 4 bowls and serve immediately or chill for upto 8 hours.
Garnish with 1 tbsp. each of radish and scallions.
