INGREDIENTS:
Tomatoes 1 lb
Red Onion ¼ cup
Seedless Cucumber ¼ cup
Red Bell Pepper ¼ cup
Clove Garlic 1
Extra Virgin Olive Oil 2 tablespoon
Red Vinegar 1 tablespoon
Salt ¼ teaspoon
Cumin ½ teaspoon
Cayenne Pepper 13 teaspoon
Avocados 2
DIRECTIONS:
- Combine all ingredients except avocados in a large bowl.
- Mash lightly with a potato masher, stir in 1 cup water, cover, and chill for at least 1 hour up to 6.
- Stir in the avocado and serve immediately.
